Millie Pasquinelli’s Fried Chicken

  • 2 to 3 lb whole chickens, chopped into pieces
  • 3 cups all-purpose flour
  • Five tablespoons seasoned salt
  • Three tablespoons garlic powder
  • salt and pepper to taste
  • Four eggs, beaten
  • 1-quart vegetable oil for frying

  • Step 1
    • Mix the flour, garlic powder, and salt in a small bowl or plate. Place the chicken pieces on a platter and roll them in the flour mixture. Next, dip each piece of chicken in the egg. Roll it in the flour mixture.
  • Step 2
    • Heat oil in a large skillet or deep fryer, heat to 375°F (190°C).
  • Step 3
    • For about 5 minutes, fry the coated pieces of chicken in hot oil. Cook covered for 10 minutes on low heat. Remove the cover and turn up the heat to make the chicken crispy. Fry for 5 minutes on each side. It is done when the chicken is cooked through, and no pink remains. Place fried chicken on paper towels until draining is complete.
